This recipe is a delicious and refreshing way to enjoy a little taste of Ireland on the Fourth of July. The combination of sweet berries and creamy, white Irish cheese is a perfect match. Serves four. Nice complement to summer burgers, grilled chicken and corn-on-the-cob.
Salad Ingredients:
- 2 cups mixed berries (strawberries, blueberries, raspberries, blackberries, etc.)
- 4 oz. white Irish cheese (such as Dubliner or Cashel Blue)
- 4 cups mixed greens (spinach, arugula, etc.)
- 1/4 cup sliced almonds
Dressing Ingredients
(Or use a sweet and sour dressing like Brianna’s Honey Mustard Dijon Dressing)
- 2 tbsp. olive oil
- 1 tbsp. balsamic vinegar
- Salt and pepper to taste
Instructions:
- Rinse and dry the mixed greens and berries.
- Cut the white Irish cheese into small cubes.
- In a large bowl, combine the mixed greens, berries, and cheese.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss to combine.
- Place on individual plates.
- Sprinkle sliced almonds on the salad and if this is an American patriotic holiday, top each with a miniature American Flag.
- Serve and enjoy the delicious, refreshing flavors of summer fruit.
