Bailey’s Irish Christmas Cake
Holiday decorations can be as simple as colored sprinkles,seasonal candies or colored frosting drizzles. Cakes are great make-ahead desserts.
A cake carrier can store a frosted cake at room temperature for four or five days. The cover will protect the cake from dust, dirt, pet hair, and more. if you don’t have a cake carrier, use a large overturned bowl.
THE YUMMY CAKE
2 cups flour
1-3/4 cups sugar
¾ cup cocoa
½ teaspoon salt
1 tablespoon baking soda
1 egg
2/3 cup oil
¾ cup buttermilk
¼ cup Bailey’s Irish Cream
1 cup strong, black coffee
THE CREAMY FROSTING
2 cups heavy whipping cream
1⁄4 – 1⁄2 cup powdered sugar
1⁄4 cup Bailey’s Irish cream
DIRECTIONS – CAKE and FROSTING
Sift dry ingredients together.
Beat egg, oil, buttermilk, liqueur, coffee together.
Add to the dry ingredients; beat together for about 3 minutes.
Pour into a greased/floured 10″ springform pan or 9×13 pan.
Bake at 350 for 35 to 40 minutes for the springform or 25 to 30 minutes for the 9×13- or until done.
Cool.
Beat frosting ingredients together until stiff.
Turn the cake out onto a plate and frost it with whipped cream mixture.
Decorate as you wish
