This is a tasty salad that mimics the colors of the Irish flag. Of course, it’s a nice choice for an Irish holiday. (List of holidays included below.) Also, a nice choice for any fall lunch or dinner including Thanksgiving. Serves four.
Ingredients
- 1 package (6 ounces) fresh greens, baby spinach preferred
- 2 medium pears, thinly sliced
- 2 medium oranges, peeled and sectioned
- 2 avocados, peeled and sliced
- 2 tablespoons crumbled feta cheese
- 2 tablespoons chopped pistachios
Dressing Ingredients
- 3 tablespoons canola oil
- 2 tablespoons orange juice
- 1 tablespoon lemon juice
- 1 teaspoon honey
- 1/2 teaspoon grated orange zest
- 1/4 teaspoon salt
Directions
- 1. Place spinach on four salad plates and top with pear slices, oranges sections, cheese and pistachios. You can mix all the salad ingredients in a large salad bowl.
- 2. Whisk the dressing ingredients thoroughly and drizzle over salads. Serve immediately.
Irish Public holidays may commemorate a special day or other event, for example, Saint Patrick’s Day and Christmas Day.
In 2023, a new, annual, public holiday was established in early February to mark St Brigid’s Day. The public holiday is the first Monday in February, except where St Brigid’s day happens to fall on a Friday, in which case, that Friday, February 1, will be a public holiday.
On a public holiday, sometimes called a bank holiday, most businesses and schools close. Other services, like public transportation, still operate but often have restricted schedules.
