Ahhh Summer. This is a beautiful time for picnics at the beach, the park, the mountains, anywhere. And we have a favorite Irish picnic egg salad sandwich recipe.
5 hard-boiled eggs, finely chopped
1 onion finely chopped
1 tablespoon Dijon Mustard
2-1/4 tablespoons mayonnnaise
1 cup finely chopped lettuce
Salt and pepper to taste
A little paprika
Slices of Irish Soda Bread (available at most Supermarkets)
DIRECTIONS:
1. In a medium bowl combine eggs, onion, mustard, mayonnaise, salt and pepper.
2. Stir and mix well.
3. Add finely chopped lettuce and mix.
4. Butter Irish Soda Bread slices if you wish.
5. (Option) add lettuce leaves to slices of bread.
6. Generously spread egg salad onto your bread.
7. Sprinkle with paprika before topping with the other slice of bread.
8. Cut into preferred shapes, place in sandwich bags and pack for lunch..
